Description

Instructions

  1. Prep the shrimp: Rinse the shrimp under cold water, then pat them dry with a paper towel. Lightly season with salt and pepper.
  2. Heat the skillet: In a large skillet, heat olive oil over medium-high heat until it shimmers.
  3. Sauté aromatics: Toss in the minced garlic and ginger, sautéing for about one minute until fragrant.
  4. Cook the shrimp: Place the seasoned shrimp in the skillet, cooking for 2-3 minutes, flipping occasionally until they turn pink and opaque.
  5. Add pineapple: Gently introduce the diced pineapple, allowing it to mingle with the shrimp for 1-2 minutes.
  6. Add sauces: Pour in the sweet chili sauce and soy sauce, mixing thoroughly to coat the shrimp and pineapple.
  7. Simmer: Let everything cook for an additional 2-3 minutes for flavors to blend.
  8. Finish with green onions: Remove from heat and fold in the green onions.
  9. Adjust seasoning: Taste and adjust with additional salt, pepper, or chili flakes, if desired.
  10. Serve immediately, preferably over rice or greens.

Notes

Consider marinating the shrimp in sweet chili sauce for added flavor. You can use an air fryer for crispier shrimp.
