Instructions

- Heat the skillet: In a large skillet, heat olive oil over medium-high heat until it shimmers.
- Sauté aromatics: Toss in the minced garlic and ginger, sautéing for about one minute until fragrant.
- Cook the shrimp: Place the seasoned shrimp in the skillet, cooking for 2-3 minutes, flipping occasionally until they turn pink and opaque.
- Add pineapple: Gently introduce the diced pineapple, allowing it to mingle with the shrimp for 1-2 minutes.
- Add sauces: Pour in the sweet chili sauce and soy sauce, mixing thoroughly to coat the shrimp and pineapple.
- Simmer: Let everything cook for an additional 2-3 minutes for flavors to blend.
- Finish with green onions: Remove from heat and fold in the green onions.
- Adjust seasoning: Taste and adjust with additional salt, pepper, or chili flakes, if desired.
- Serve immediately, preferably over rice or greens.
