Description

A refreshing summer salad with juicy pineapple, crisp cucumber, and zesty lime dressing that bursts with flavor.


Ingredients

  • 2 cups diced fresh pineapple
  • 1 large English cucumber or 2 Persian cucumbers, diced
  • 1/4 small red onion, sliced thin
  • 1/4 cup chopped cilantro leaves
  • 1 small jalapeño, sliced thin (optional)
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tbsp lime juice, freshly squeezed
  • 1 tbsp honey or maple syrup
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp crushed red pepper flakes (optional)

Instructions

  1. Prepare the ingredients by dicing the fresh pineapple and cucumber, slicing the red onion, and jalapeño if using.
  2. Combine the diced pineapple, cucumber, onion, cilantro, and jalapeño in a large mixing bowl.
  3. Whisk together lime juice, honey (or maple syrup), olive oil, salt, and both types of pepper in a smaller bowl.
  4. Pour the dressing over the salad mixture, and sprinkle with feta cheese if desired.
  5. Chill in the refrigerator for at least 30 minutes before serving.
