Description

Experience the vibrant flavors of Tacos al Pastor, featuring marinated pork and caramelized pineapple wrapped in warm corn tortillas.


Ingredients

  • 1 lb Pork Shoulder or Pork Loin
  • 1 cup Fresh Pineapple, diced
  • 1/2 cup Adobo Sauce
  • 3 cloves Garlic, minced
  • 1 Onion, chopped
  • 1/4 cup Fresh Cilantro, chopped
  • Juice of 2 Limes
  • 8 Corn Tortillas
  • Salt & Pepper to taste

Instructions

  1. Marinate the pork: Cut the pork into small pieces and place them in a large bowl. Mix in adobo sauce, minced garlic, chopped onion, salt, and pepper. Ensure the pork is thoroughly coated. Cover and refrigerate for several hours or overnight.
  2. Preheat your grill: Heat your grill or grill pan to medium heat.
  3. Prepare the skewers: Thread marinated pork and chunks of pineapple onto skewers, alternating between the pork and pineapple.
  4. Grill the skewers: Place on the grill and cook for 10-15 minutes, turning occasionally, until the pork is cooked through and has a nice char.
  5. Rest the skewers: Remove from heat and let them rest for a few minutes.
  6. Warm the tortillas: Lay corn tortillas on the grill for about 30 seconds per side.
  7. Assemble the tacos: Chop grilled pork and pineapple into bite-sized pieces and place on warm tortillas.
  8. Top with fresh ingredients: Finish with cilantro and a squeeze of lime juice before serving.

Notes

For the best flavor, marinate the pork the night before. Customize with veggies or additional toppings as desired.
