- 1 lb Pork Shoulder or Pork Loin
- 1 cup Fresh Pineapple, diced
- 1/2 cup Adobo Sauce
- 3 cloves Garlic, minced
- 1 Onion, chopped
- 1/4 cup Fresh Cilantro, chopped
- Juice of 2 Limes
- 8 Corn Tortillas
- Salt & Pepper to taste
Instructions
- Marinate the pork: Cut the pork into small pieces and place them in a large bowl. Mix in adobo sauce, minced garlic, chopped onion, salt, and pepper. Ensure the pork is thoroughly coated. Cover and refrigerate for several hours or overnight.
- Preheat your grill: Heat your grill or grill pan to medium heat.
- Prepare the skewers: Thread marinated pork and chunks of pineapple onto skewers, alternating between the pork and pineapple.
- Grill the skewers: Place on the grill and cook for 10-15 minutes, turning occasionally, until the pork is cooked through and has a nice char.
- Rest the skewers: Remove from heat and let them rest for a few minutes.
- Warm the tortillas: Lay corn tortillas on the grill for about 30 seconds per side.
- Assemble the tacos: Chop grilled pork and pineapple into bite-sized pieces and place on warm tortillas.
- Top with fresh ingredients: Finish with cilantro and a squeeze of lime juice before serving.
Notes
For the best flavor, marinate the pork the night before. Customize with veggies or additional toppings as desired.
