Description

A delicious dish combining salmon glazed in teriyaki sauce with vibrant vegetables served over fluffy rice.


Ingredients

  • 2 salmon fillets
  • 1 cup rice (white or brown)
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • Sesame seeds and green onions for garnish

Instructions

  1. Start by cooking the rice according to package instructions. Once done, set aside.
  2. In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic until well combined.
  3. Heat a non-stick skillet over medium-high heat until hot.
  4. Carefully add the salmon fillets skin-side down and cook for about 4–5 minutes to develop a golden crust.
  5. Flip the salmon gently, then pour some teriyaki sauce over it. Cook for an additional 4–5 minutes, until the salmon is opaque and flakes easily with a fork.
  6. While the salmon cooks, stir-fry your mixed vegetables in another skillet until they’re just tender but still crunchy.
  7. Assemble the bowls by scooping rice into a deep bowl, layering on stir-fried vegetables, and topping it with glazed salmon.
  8. Drizzle any extra teriyaki sauce on top and finish with sesame seeds and chopped green onions.

Notes

Customize vegetable selection based on seasonal availability. Marinating the salmon for 15-30 minutes enhances flavor.
