Description
A delicious dish combining salmon glazed in teriyaki sauce with vibrant vegetables served over fluffy rice.
Ingredients
Scale
- 2 salmon fillets
- 1 cup rice (white or brown)
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 1 teaspoon minced garlic
- Sesame seeds and green onions for garnish
Instructions
- Start by cooking the rice according to package instructions. Once done, set aside.
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic until well combined.
- Heat a non-stick skillet over medium-high heat until hot.
- Carefully add the salmon fillets skin-side down and cook for about 4–5 minutes to develop a golden crust.
- Flip the salmon gently, then pour some teriyaki sauce over it. Cook for an additional 4–5 minutes, until the salmon is opaque and flakes easily with a fork.
- While the salmon cooks, stir-fry your mixed vegetables in another skillet until they’re just tender but still crunchy.
- Assemble the bowls by scooping rice into a deep bowl, layering on stir-fried vegetables, and topping it with glazed salmon.
- Drizzle any extra teriyaki sauce on top and finish with sesame seeds and chopped green onions.
Notes
Customize vegetable selection based on seasonal availability. Marinating the salmon for 15-30 minutes enhances flavor.
