Description

  • 1 pound boneless chicken breast, thinly sliced
  • 4 large flour tortillas
  • ½ cup creamy or crunchy peanut butter
  • 3 tablespoons soy sauce (divided)
  • 1 tablespoon sesame oil (divided)
  • 1 handful fresh lettuce leaves
  • 1 cup purple cabbage, shredded
  • 23 carrots, julienned
  • 1 small bunch fresh cilantro, chopped
  • Juice of ½ lime
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 1 tablespoon honey

Instructions

  1. Prepare the Peanut Sauce: In a medium bowl, whisk together ½ cup peanut butter, 2 tablespoons soy sauce, 1 tablespoon sesame oil, juice from half a lime, 2 minced garlic cloves, 1 inch of grated ginger, and 1 tablespoon honey until smooth and creamy. Set aside.
  2. Marinate the Chicken: Combine sliced chicken in a bowl with 1 tablespoon soy sauce and 1 tablespoon sesame oil. Mix well and let it marinate for about 10 minutes.
  3. Prep the Vegetables: Wash and dry lettuce leaves, shred purple cabbage, julienne carrots, and chop cilantro. Place each in separate bowls.
  4. Cook the Chicken: Heat a large skillet over medium-high heat. Add marinated chicken and cook for 6-8 minutes, stirring occasionally until golden brown and cooked through.
  5. Warm the Tortillas: In a dry skillet, warm tortillas for about 30 seconds on each side, or microwave wrapped in a damp paper towel for 20 seconds.
  6. Assemble the Wraps: Spread 2 tablespoons peanut sauce down the center of each tortilla. Layer on lettuce, cabbage, carrots, chicken, and cilantro. Drizzle with extra peanut sauce if desired.
  7. Fold & Serve: Fold in the sides of each tortilla, roll tightly to form a wrap, and cut in half diagonally. Serve with extra peanut sauce on the side.

Notes

Make the peanut sauce a day ahead for convenience. Customize toppings based on your preferences!
