- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup coconut cream
- 1/4 cup fresh lime juice
- Zest of 1 lime
- 1 cup shredded coconut (unsweetened or sweetened)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish.
- Combine the graham cracker crumbs, melted butter, and sugar in a mixing bowl; stir until well combined.
- Press this mixture firmly into the bottom of the prepared dish.
- Whisk together the sweetened condensed milk, coconut cream, lime juice, and lime zest in another bowl until smooth.
- Fold in the shredded coconut until evenly distributed.
- Pour the coconut-lime filling over the crust, spreading it evenly.
- Bake for 20-25 minutes until the edges are golden brown and the filling is set.
- Remove from the oven and let cool completely; refrigerate for at least 2 hours before slicing.
- Slice into squares or rectangles and serve chilled.
