Description

Delight in the refreshing balance of sweet and tart flavors with these creamy Coconut Lime Bars, perfect for any occasion.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup coconut cream
  • 1/4 cup fresh lime juice
  • Zest of 1 lime
  • 1 cup shredded coconut (unsweetened or sweetened)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish.
  2. Combine the graham cracker crumbs, melted butter, and sugar in a mixing bowl; stir until well combined.
  3. Press this mixture firmly into the bottom of the prepared dish.
  4. Whisk together the sweetened condensed milk, coconut cream, lime juice, and lime zest in another bowl until smooth.
  5. Fold in the shredded coconut until evenly distributed.
  6. Pour the coconut-lime filling over the crust, spreading it evenly.
  7. Bake for 20-25 minutes until the edges are golden brown and the filling is set.
  8. Remove from the oven and let cool completely; refrigerate for at least 2 hours before slicing.
  9. Slice into squares or rectangles and serve chilled.

Notes

These bars taste even better the next day and can be stored in the fridge for up to a week.
