Decadent vegan cups combining the crunch of puffed quinoa and the creamy goodness of peanut butter, all enveloped in rich dark chocolate.
Ingredients

- 1 cup creamy peanut butter
- 1 cup dark chocolate chips
- 1 cup puffed quinoa
- 1 tablespoon maple syrup or agave nectar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Melt dark chocolate chips in a microwave-safe bowl or use the double boiler method until smooth.
- Combine creamy peanut butter, maple syrup, vanilla extract, and salt in a separate mixing bowl. Stir well.
- Fold in the puffed quinoa, ensuring each piece gets coated with the peanut butter mixture.
- Line a muffin tin with cupcake liners to shape the cups.
- Pour a small layer of melted chocolate into each liner, covering the bottom.
- Add a generous spoonful of the peanut butter mixture on top of the chocolate layer.
- Pour more melted chocolate over the peanut butter filling until completely covered.
- Repeat these steps until all ingredients are used.
- Refrigerate for about 30 minutes to allow the chocolate to set.
- Remove the cups from the liners and enjoy!
Notes
These cups can be made a day in advance and stored in the refrigerator for up to a week. Customize with nuts or dried fruit if desired.
