Description

Decadent vegan cups combining the crunch of puffed quinoa and the creamy goodness of peanut butter, all enveloped in rich dark chocolate.


Ingredients

  • 1 cup creamy peanut butter
  • 1 cup dark chocolate chips
  • 1 cup puffed quinoa
  • 1 tablespoon maple syrup or agave nectar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Melt dark chocolate chips in a microwave-safe bowl or use the double boiler method until smooth.
  2. Combine creamy peanut butter, maple syrup, vanilla extract, and salt in a separate mixing bowl. Stir well.
  3. Fold in the puffed quinoa, ensuring each piece gets coated with the peanut butter mixture.
  4. Line a muffin tin with cupcake liners to shape the cups.
  5. Pour a small layer of melted chocolate into each liner, covering the bottom.
  6. Add a generous spoonful of the peanut butter mixture on top of the chocolate layer.
  7. Pour more melted chocolate over the peanut butter filling until completely covered.
  8. Repeat these steps until all ingredients are used.
  9. Refrigerate for about 30 minutes to allow the chocolate to set.
  10. Remove the cups from the liners and enjoy!

Notes

These cups can be made a day in advance and stored in the refrigerator for up to a week. Customize with nuts or dried fruit if desired.
