Instructions
- Chop your veggies: Start by roughly chopping your vegetables into small, uniform pieces.
- Sauté the onions: In a large pot, heat a splash of olive oil over medium heat. Toss in your onions and sauté them until they become translucent, about 2-3 minutes.
- Add remaining vegetables: Stir in the remaining chopped vegetables (carrots, celery, bell peppers) and sauté for an additional 5-7 minutes.
- Pour in the broth: Carefully pour in your chosen broth, scraping the bottom of the pot. Bring everything to a gentle boil.
- Season it up: Add in your herbs, salt, and pepper. Let the flavors meld as the soup comes to a rolling boil.
- Simmer: Reduce heat, allow your soup to simmer for about 30 minutes until the vegetables are tender.
- Add noodles or legumes: If desired, toss them in during the last 10 minutes of cooking.
