Ingredients

  • Optional: 1 cup noodles or legumes (like lentils or chickpeas)

Instructions

  1. Chop your veggies: Start by roughly chopping your vegetables into small, uniform pieces.
  2. Sauté the onions: In a large pot, heat a splash of olive oil over medium heat. Toss in your onions and sauté them until they become translucent, about 2-3 minutes.
  3. Add remaining vegetables: Stir in the remaining chopped vegetables (carrots, celery, bell peppers) and sauté for an additional 5-7 minutes.
  4. Pour in the broth: Carefully pour in your chosen broth, scraping the bottom of the pot. Bring everything to a gentle boil.
  5. Season it up: Add in your herbs, salt, and pepper. Let the flavors meld as the soup comes to a rolling boil.
