Description

Deliciously crispy zucchini-carrot fritters made with fresh vegetables, perfect for a snack or appetizer.


Ingredients

  • 2 medium zucchinis, grated
  • 2 medium carrots, grated
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Oil for frying

Instructions

  1. Prepare the Ingredients: Grate your zucchini and carrots into a large bowl, then squeeze out any excess moisture with a kitchen towel.
  2. Mix the Batter: Add flour, Parmesan cheese, eggs, salt, pepper, garlic powder, and onion powder to the bowl. Stir until combined.
  3. Heat the Skillet: Pour oil into a skillet over medium heat and let it warm up.
  4. Form and Fry: Drop spoonfuls of the mixture into the hot skillet, flattening them with a spatula.
  5. Fry to Perfection: Cook each fritter for 3-4 minutes on one side until golden brown before flipping to cook the other side.
  6. Drain Excess Oil: Remove the fritters and place them on paper towels to drain any oil. Serve warm.

Notes

These fritters can be made ahead of time and stored in the refrigerator for up to 24 hours before frying. Use gluten-free flour for a gluten-free option.
